Nippattu rice crackers

Nippattu is a popular dry snack from the state of Karnataka. It is tasty and can be eaten anytime.

Ingredients

  • 1 cup rice flour
  • 1 tablespoon roasted groundnut
  • 1 tablespoon split dahlia
  • 1 tbsp desiccated coconut
  • 2 teaspoon chilly powder
  • salt to taste
  • 1 tablespoon warm oil
  • oil for frying
  • water for kneading

Instructions

  • Keep all the ingredients ready.
  • Remove the skin of the groundnuts, coarsely grind it along with split dahlia and desiccated coconut. 
  • Add all dry ingredients to the flour.
  • Heat oil in a pan, once it is heated add one tablespoon oil to this.
  • Mix well. Add little water and mix it to a stiff dough.
  • Take a small ball of the dough. Grease a  thick plastic sheet with a little oil. Make it into a circular disc. 
  • Repeat for a few more, you can fry six at a time (of course depending on the size of the pan)
  • Slowly, let the discs into the oil. Deep fry on medium heat, after sometime, increase it for sometime and then reduce.  It should be golden in colour.
  • Remove them on an absorbent paper. 
  • After sometime, store them in a  container.

Notes

The crackers should be neither too thick or too thin. If they are thick, they tend to be soft while very thin ones become hard to eat.
