Spanish Rice

A tasty and unique dish from Mexican cuisine. It is a one pot dish which can be prepared quickly with few ingredients. The flavour of chipotle adobado sauce makes it zing and splendid.

Ingredients

  • 1 cup basmati rice 1 cup =250ml
  • 1 onion finely chopped
  • 4 red tomatoes
  • 3 cloves garlic cut into pieces
  • 2 tsp cumin powder
  • 1 tbsp chipotle adobado sauce
  • 2 cups stock
  • salt to taste
  • 1 tbsp oil
  • cilantro chopped

Instructions

  • Wash and soak the basmati rice for ten minutes.

  • Make an incision on the tomatoes and put them in  boiling water for sometime.

  • Once cooled, blend and make a puree of it.

  • Take oil in a pan. Heat it. Add onion and garlic pieces to it. Saute it for sometime.
  • Add cumin powder to it.

  • Saute for a minute.

  • Now, add tomato puree and chipotle adobodo sauce to it. Saute for two minutes.

  • Add the soaked rice to it. Saute for a minute.
  • Add salt and stock to it. Give a stir.

  • Close the lid and allow to cook on medium flame till done. It needs about ten to twelve minutes.

  • Spanish rice is ready to serve. Garnish with cilantro.

Notes

  • Cook on medium flame. I keep a small bowl to stop the steam from escaping.
  • You can follow other methods of cooking also. To make in pressure cooker, follow the same method, and keep the whistle over it.
  • To cook in rice cooker, transfer it to the rice cooker and then add the stock.
