Moongdal salad

Salads form an important part of our diet. This version is called as koshambir and is usually made during functions. It is served to ladies during haldi kumkum. One can make it as an accompaniment with rice or chapati.

INGREDIENTS:

  • moong dal 1 cup
  • bengal gram 1 tsp
  • cucumber 1 big
  • oil for seasoning 2 tsp
  • mustard seeds 1/4 tsp
  • asafoetida a pinch
  • curryleaves a few
  • green cillies 2
  • fresh coconut 1 cup
  • salt to taste
  • lemon 1/2

METHOD :

  • Soak moong dal and gram dal in water for half an hour.
  • Remove the skin of big cucumber and cut it into small pieces.
  • Drain the water of the dal and put it in a colander for ten minutes.
  • Later,put in a bowl and add cucumber,salt  and grated coconut to it.
  • Make seasoning and add to it.
  • Add a dash of lime juice to it.
  • Serve as an accompaniment or binge as a snack.

Tips :

Cucumber used is the long variety. Remove the edges and rub well in circular motion. Then peel the skin. The seeds should be removed.

Rajbhog milkshake

Milkshakes are an all time favourite of kids.  I find it a good remedy for stubborn kids who refuse to drink milk. They are ideal for working men as it is healthy and filling. It is an ideal breakfast menu.

It was during the summer holidays, we visited a new restaurant and this caught my attention. It was simply  amazing and the kids loved it. One  day I thought I should give it a try and it not only turned out well but awaited !

Ingredients  :

  • Milk 2 glasses
  • ice cream 2 scoops
  • dates 6
  • almonds 4
  • cashews 6
  • banana 2
  • sugar 1tsp ( optional)
  • vanilla essence a few drops
  • ice cream for topping

Method :

Soak dates, almonds and cashews in half a cup of hot milk for half an hour. Grind them together. Now add bananas,ice cream  and milk and blend together. Add sugar if needed .  Chill and serve with a topping of ice cream.

Handy hints:

Freeze the bananas before hand. It gives a good texture.

Custardapple milkshake

Custard apple,a seasonal fruit, creamy, sugary  and pulpy is loved by many except the mess of eating it .It is considered to be the fruit of the Lords. It is a delicious fruit ideal to make desserts.The seeds are a menace to eat  Oh!  boy,  but choose the one with bigger eyes and you are going to love it.

Ingredients 

 Custard apple 2

milk chilled 2 glasses

sugar 1 tsp

 vanilla milk powder 1 tsp

Method :

Remove the pulp from the seeds. Blend all the ingredients together. Serve chilled.

 

 

Green gram veggie

Green gram is widely used in South India to make as an accompaniment with jowar roti or chapati. It is mixed with a few spices and cooked well. It is often made as it is healthy and  makes a good substitute for the regular veggies.

The ingredients that you need are :

  • greengram 1 bowl  
  • onion 2
  • green chilles 3
  • ginger 1inch
  • coriander leaves half bunch
  • oil 2tsp
  • cumin seeds 1/4tsp
  • asafoetida 1/8tsp
  • turmeric powder 1/8tsp
  • salt to taste

Method :

  • Cook the green gram in a pressure cooker.
  • Grind coriander leaves,ginger and green chillies to a fine paste.
  • Cut onions into small pieces.
  • Heat oil in a kadai,add the mustard seeds. When they crackle add asafoetida , turmeric powder and the onions. Saute till light pink. Add the paste and salt and mix well. Now ,add the cooked green gram to it and mix well. Simmer for five minutes. 
  • Serve with chapati or jowar roti.

 

Tomato and Onion Salad

The tomato and onion salad is a simple yet tasty salad which can be made quickly. It tastes great as an accompaniment with chapati or roti. 

Ingredients that you need are :

  • tomatoes 4
  • onions 2
  • green chillies 2
  • sugar 1/4 tsp
  • salt to taste
  • oil 2 tsp
  • mustard seeds 1/4 tsp
  • asafoetida a pinch
  • turmeric 1/4 tsp
  • curry leaves a few

To make :

Wash and dice tomatoes and onions into small pieces. Mix them in a bowl. Make seasoning with mustard seeds, asafoetida,turmeric, green chilly and curry leaves. Add salt and sugar. Garnish with fresh parsley.
Choose bright red tomatoes. Make use of the firm ones for salads.

Take a tip:

  • Use fresh vegetables for salads.
  • Cutting of veggies play an important role in salads. Each gives a different taste. Grating, slicing into small chunks or big chunks, each is unique.
  • Make sure you cut all of them the same way.

Dal with green leaf

Tur dal cooked with green leaf vegetables is healthy and makestheideal south indian meal. It is popular  as “pappu” in Andhra while in Karnataka it is known as ” muddipalya” . Our meals seems to be highlighted by a variety of green leaves as spinach, methi  or many others which are abundantly avilable. This is the recipe of Karnataka.

INGREDIENTS :

  • tur dal 1 cup 
  • spinach  1 cluster
  • methi 1 cluster 
  • green chillies 4
  • oil 2 tbsp
  • mustard seeds 1 tsp
  • asafoetida a pinch
  • turmeric powder 1/4 tsp
  • tamarind  a lemon size
  • salt to taste
  • sambar powder 1 tsp

a complete meal

METHOD :

Cook tur dal in pressure cooker. Cut the stalk of the green leaves and chop them finely. Put them in salt water for sometime. Heat oil in a kadai and make the seasoning with mustard, asafoetida, turmeric and green chillies. Add the green leaves and salt, mix and let cook for sometime. Then add the cooked dal and mix well. Let boil for sometime. Then, add the tamarind pulp  and sambar powder and allow to  simmer on low flame for five minutes. Serve with hot rice or jowar roti.
