Mocha Banana Cake sounds good isn’t it? This is such a good one, I am just loving it, it’s made of wheat flour, sugarless, butterless and eggless ! This recipe is part of brand partnership with PlaceofOrigin.in and Plattershare for the Belly Nirvana Campaign.

Ingredients:   (measurement used: 1 cup = 200grams)

  • 1 cup wheat flour
  • 2 teaspoon mocha powder
  • 1 teaspoon baking soda
  • 1/2 cup milk
  • 1/2 cup honey
  • 2 ripe bananas
  • 1/4 cup oil
  • 1/2 teaspoon ghee
  • 1/2 teaspoon wheat flour
  • 8 almond broken into pieces

Method:

  1. Sieve the flour, baking soda and mocha powder together.
  2. Mash the bananas, beat it well.
  3. Add milk, honey and oil to it. Mix it.
  4. Now, add the wheat flour and gently mix it.
  5. Add the dry fruits to it.
  6. Pre-heat the microwave.
  7. Grease the tray with a little ghee and flour over it.
  8. Pour the batter over the greased plate.
  9. Microwave it for seven to eight minutes. The inserted toothpick should come out clean.
  10. Allow to cool on the rack.

Mocha Banana Cake

Mocha Banana Cake is a tasty and healthy cake. It has no refined flour, sugar and butter. Addition of mocha chocolate powder gives a nice flavour to it.

Ingredients

  • 1 cup wheat flour
  • 2 teaspoon mocha chocolate powder
  • 1 teaspoon baking soda
  • 2 ripe bananas
  • 1/2 cup milk
  • 1/2 cup honey
  • 1/4 cup oil
  • 1/2 teaspoon clarified butter (ghee) for greasing
  • 1/2 teaspoon wheat flour for dusting
  • 8 almonds chopped

Instructions

  1. Sieve wheat flour, baking soda and mocha powder together.

  2. Mash the bananas. Add honey, oil and milk to it. Beat it well.

  3. Add the flour to it. Slowly mix the batter. Add chopped almonds to it.

  4. Pre-heat the microwave. Grease the baking tray with clarified butter, dust with flour. Pour the batter over it and bake it for eight minutes in two intervals.

  5. The inserted toothpick should come out clean. Once it is done, cool it on the rack.

Recipe Notes

  • The timings may change for different microwave oven.
  • You can use an OTG.

Nan Katai biscuits

Since yesterday, I have been on a baking spree, trying my hand at few recipes. My house is smelling so good, baking is therapeutic, I think, I should do it more often. Yes, it’s again time for our blog hop with the theme as”Baking” .  Here is my sincere attempt to make the traditional Indian biscuits, Nan Katai.  Well, I am quiet happy, the taste is good and they will  not last long.

I had read long time back, that the traditional recipe of Nan katai or Nan khatai as many write, makes use of gram flour and semolina also. I tried to incorporate the same here. Thus, along with self raising flour, I have used a little of semolina and gram flour. I threw in a few strands of saffron and the taste on biting, gave a nice fragrance. For reference, I checked it here. Over to the recipe of my version of Nan Katai biscuits.

Ingredients

Instructions
  1. Take a bowl and add the dry ingredients (except cardamom and saffron strands).
  2. Put butter and mix gently with the spoon.
  3. Mix well until you get perks and the dough is formed. Use a little milk if necessary. lastly add cardamom powder and saffron strands to it.
  4. Keep aside for ten minutes.
  5. Pre-heat the oven.
  6. Grease the tray with a little oil. You can also use parchment paper.
  7. Make small balls, slightly flatten them before keeping them.
  8. Keep in the oven. My oven needed five to seven minutes. The biscuits get a brownish colour on and the fragrance spreads around.
  9. Once done, keep them in the oven for five minutes.
  10. Later, put on the wire rack.
  11. Nan katai biscuit is ready to serve.
Recipe Notes

The temperature settings are different for each oven.

My oven is Bajaj Majesty 600QT.  It has different knobs for time and temperature settings.

It is essential that the butter is soft. Hence,one hour prior, remove from refrigerator and keep it at room temperature.

If you use salted butter, do not add the extra  pinch of salt.

Baking has been one of my interests, though I have not advented much. It had always been with microwave, but this time I thought of trying in my OTG which had been lying unused. Yes, it is again the time of our blog hop with the theme “baking ” and today I am sharing with you delicious orange zest cookies.

These cookies with orange zest and juice along with tuti fruiti  and cashews is flavourful and makes me get back to baking it again.

A few pointers to use Oven Toaster Grill.

Preheating of  the oven is a necessity. Mine is Bajaj Majesty 700QT . Here I have used 2 on the dialer.

Different time is necessary for baking different dishes. Refer catalogue and your experience is the best outcome.

One needs to keep a watch, lest the food may get burnt. The aroma of baked dishes reaches outside first.

Do not touch with hand.

Cooling on the rack is essential.

Here is the recipe of my cookie :

Ingredients :

  • All Purpose Flour / maida 2cups
  • Unsalted butter 225 grams
  • Castor sugar 1 cup
  • salt  1/4 tsp
  • baking powder 1/2tsp
  • orange zest of 1 orange
  •  orange juice 1/4 cup (fresh )
  • tuti fruti  1/2 cup
  • cashew pieces 1/2 cup

Method :

  1. Mix the flour, salt, baking powder and orange zest together. For the orange zest, I have grated the skin of orange and used it. Be careful not to use the pith of it.
  2. Beat the butter and sugar, till it is soft and fluffy.
  3. Now, add the juice and the flour to it and gently mix them together to form a dough of thick consistency.
  4. Wrap the dough in a plastic wrap and refrigerate for one hour.
  5. Before baking ,pre-heat the oven
  6. Line the tray with parchment paper and grease with little butter and dust with flour.
  7. Shape them into cookies and keep them in the oven to bake.
  8. Initially I put the time dial on 3 . Then again I put it for 1
  9. Remove them slowly and keep them on the wire rack to cool.
  10. Store orange zest cookies in air tight container.
  11. Alternatively, you can bake in microwave oven too.
