Lemon rice is one of the easiest meals that we tend to make. A traditional dish, south indian families tends to make this more often. One cannot deny the fact that it is equally tasty and if made using onions and fresh peas, the kiddos will surely like it.

            Lemon rice is usually made with seasoning of groundnuts, but with fresh green peas around, I love to use it in all dishes. I add the fresh peas in the seasoning and let it to crackle. Boiling will wither the taste of it. Use a lot of coriander and curry leaves to give the splendid fragrance and be sure to cook the seasonings really well. The crispiness of the lentils is liked by many.

INGREDIENTS :

  • rice cooked 1 cup
  • onion 1 finely chopped
  • fresh peas 1 small bowl
  • cashewnuts 6
  • oil 1tbsp
  • mustard seeds 1/2 tsp
  • bengal gram 1tsp
  • urad dal 1tsp
  • asafoetida a pinch
  • turmeric powder 1/4 tsp
  • salt to taste
  • lemon 1
  • curry leaves
  • coriander leaves

PROCEDURE :

Allow the cooked rice to cool. Make seasoning, add the mustard seeds, when they crackle, add bengal gram and urad dal. Allow it to be slightly dark, then add peas, green chilli and onions. Now, add cashewnuts along with asafoetida ,curry leaves and turmeric powder. Turn off the flame. Add the rice and salt to it. Mix gently. Add lemon juice and finely cut coriander leaves to it . Lemon rice is ready to serve.
