Kothimbir Vadi / Maharashtrian Cuisine

Kothimbir Vadi  is one of the specialities of the Maharashtrian cuisine. It is fritters made of coriander leaves.  You can use them as snacks with tea or as an accompaniment with main course of food.

When the theme was decided, I was sure that I would be making this dish. It was in my mind, since a long time to try and learn. Well, after browsing the internet, I followed the recipe from vegrecipesofindia. The outcome was good and liked by all.

Gram flour is mixed with fresh chopped coriander leaves and other spices. It is then put to steam. Here, you can use the microwave if you wish. It is then allowed to cool and later deep fried.

Fritters made of gramflour and coriander, make a great snack to binge on with a cup of hot tea.
Ingredients
  • gram flour 1 cup, 200 grams
  • coriander chopped 1 cup
  • green chilly 1
  • ginger 1/2 inch
  • chilly powder 1/2 tsp
  • turmeric powder 1/4 tsp
  • sesame seeds 1tsp
  • groundnut powder (roasted) 11/2 tsp
  • salt to taste
  • water to mix
Instructions
  1. Grind green chilli and ginger in a small jar.
  2. Mix all the ingredients to a batter of medium consistency.
  3. Grease a bowl and pour the batter. Steam it for ten minutes, as you do idlis.The knife should come out clean, when you insert it.
  4. Remove, allow to cool, cut into wedges and deep fry in oil till crisp
  5. Serve with green chutney or tomato ketchup.
Notes
You can also steam in the microwave for three minutes.

Grind the chilli and ginger to a paste. Mix all the ingredients together to a batter of medium consistency. Grease a mould and steam it as you cook idlis or dhoklas for ten minutes.

These are the steamed vadas which I have cut them into rectangular wedges. You can eat them that way too.

They are deep fried in oil and ready to serve. You can use green chutney along with it.

Looks similar to Pathrode, one of my favorite dishes. Never tried this dish and have bookmarked.. Vadi looks delicious Jaya
