Multigrain Khichdi

Khichdi is a popular one pot meal which is relished by all. Popularly known as pongal, this has been made since ages, but with time, different versions are available. With brown rice being used regularly in many kitchens, khichdi is  also made of it. Here is another kind of khichdi  made with brown rice. This is a multigrain  khichdi, very healthy and unique.

In today’s recipe khichdi is made using brown rice, oats,quinoa along with moong dal and a few other veggies. I have used equal quantity of all the four ingredients.  Beleive me,the use of all these ingredients have not altered the taste at all. Do make a small quantity and check for yourself. If you are searching for a quick and healthy meal, then you do need to give this a try. This is one of the dishes that I frequently make these days .

A one pot meal which is healthy and tasty.
Ingredients
  • brown rice 1 cup,
  • moong dal 1 cup
  • oats 1 cup
  • quinoa 1 cup
  • onion 1
  • capsicum 1
  • cumin 1tsp
  • ginger 1 inch grated
  • pepper powder 1/2 tsp
  • oil 1tbsp
  • turmeric powder 1/2tsp
  • salt to taste
  • water 12 cups
  • 1 cup = 100 grams
Instructions
  1. Wash the brown rice and soak in water for one hour.
  2. Wash the quiinoa and soak it in another vessel for half an hour.
  3. Chop the veggies and keep aside.
  4. Take oil in a pan and heat it. Add cumin, as it splutters, put in the onion and ginger to it. Saute for a while.
  5. Then, add the capsicum pieces to it.
  6. Remove the water from brown rice and keep it aside. Add the rice and saute it. .Wash the moong dal and put it along with the rice.
  7. The quinoa too is to be added. Powdefr the oats and add it. Saute for two minutes. Now, add turmeric powder and pepper powder to it.
  8. Add twelve cups of water and salt to it. Give a stir. Close the lid and cook for two whistles.
Notes
Brown rice needs to be soaked.[br]The soaked water can be used for cooking.[br]You can add peas or horse gram to it. [br]Along with onions, you can add tomatoes too.

capsicum 1
cumin 1tsp
ginger 1 inch grated
pepper powder 1/2 tsp
oil 1tbsp
turmeric powder 1/2tsp
salt to taste
water 12 cups
1 cup = 100 grams

Method :

Wash the brown rice and soak in water for one hour.
wash the quiinoa and soak in water for half an hour.
Chop the veggies and keep aside.
